I like fresh and simple food during hot summerdays...

Im Sommer darf es auch mal etwas Leichtes sein das durchaus schnell geht und nicht unbedingt aus 100 % Fleisch besteht.

Festive Holiday Salad

Salad with goat cheese, turkey, pomegranate seeds and pecans.


Salad with goat cheese, turkey, pomegranate seeds and pecans.

Ingrediants:
  • a few ounces of Mixed Salad Greens per serving
  • a few ounces your favorite toasted Nuts (we love pecans, walnuts and hazelnuts)
  • a few ounces sliced Dried Figs (raisins and other dried fruits great too)
  • fresh Pomegranate Arils (seeds)
  • leftover shredded Turkey (or any protein you have handy)
  • squeeze of Lemon
  • splash of Olive Oil
  • dash of Sea Salt
  • dash of Cracked Black Pepper
  • Goat Cheese (or your favorite cheese)

Lemony Macaroni Salad

Ingrediants:
  • 1 lb. macaroni, cooked and cooled
  • 3 stalks celery, minced
  • 3 large carrots, minced
  • 1/2 red onion, minced
  • 1/3 cup parsley, minced
  • 1/3 cup light mayonnaise
  • 3-4 tablespoons milk
  • juice of 2 lemons
  • zest of 1/2 a lemon
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
